Raw strawberry cheesecake slice

Base Ingredients

  • ½ cup almonds
  • ½ cup macadamia nuts
  • 2 tablespoons coconut oil, melted
  • 3 medjool dates
  • pinch on raw ground vanilla bean powder or 1 tspn pure vanilla extract

Cheesecake filling

  • 2 cups raw cashews, soaked overnight
  • 6 tablespoons coconut oil, melted
  • zest and juice of 1 lemon
  • 3 tablespoons of maple syrup
  • 2 cups hulled strawberries

Place all base ingredients into food processor, and process until a course crumbly mixture forms.  Transfer to a loaf pan lined with baking paper. Push ingredients down evenly and place in fridge or freezer to set.

Place cheesecake ingredients into food processor and process until a creamy consistency.  Spread this evenly, over the top of the base and place into the freezer to set.

Top with toasted coconut or fresh strawberries.
